Bayburt Castle is a historical castle located on a hill overlooking the city of Bayburt.

It is not known when and when the castle was built for the first time. The castle was restored at various times. It was restored during the reign of Byzantine Emperor Justinian I. Bayburt Castle, which was one of the first places captured by Turks in Anatolia, was fortified during the Seljuks, Saltuks and Danişmendliler period. II. During the time of his son Tugrul Shah, the ruler of Kilicarslan, Erzurum, the castle underwent its most extensive and thorough repair against threats from the Trabzon Empire.

In 1514, after the siege of Bayburt, it was captured by the Ottomans. Murad underwent significant repairs during the period. Evliya Çelebi, who visited Bayburt in 1647, stated that there was a 300-digit neighborhood and mosque inside the castle. The castle was destroyed during the 1828-1829 Ottoman-Russian War. The perimeter of the fortress is more than 2 kilometers long and its walls are 30 meters high.

In 2017, archaeological studies and restoration of the castle were started.
