From 1072 to 1202, the city was dominated by the Saltuklu Principality, which sometimes ruled in the Erzurum region, and sometimes by the Danişmentliler. At one point it was occupied by Theodoros Gabras, the commander of Alexios I, but soon re-entered the control of the Danishments. (1098) When the Seljuks ended the Saltuklu Principality in 1202, they seized Bayburt.

The main development of Bayburt was during the reign of Mugisuddin Tugrul Shah of Erzurum Melik and his son Cihan Shah (1020-1230), brother of Turkmen Shah Suleiman Shah. Tugrul Shah Bayburt rebuilt and fortified the castle. While the borders against the Mongols were strengthened by Alaeddin Keykubad I, Bayburt was connected to Konya together with Erzurum. After the Battle of Kösedağ in 1243, Bayburt remained under the control of the Seljuks in accordance with the agreement made during the invasion of Anatolia by the Mongols. This is understood from the fact that in 1291, coins were suppressed by Giyaseddin Mesud.

Bayburt, which is Turkmen and speaks Turkish, developed further due to its presence on the Tabriz-Trabzon road during the reign of Ilkhans and Safavids, was a place where the Genoese and Venetian caravans stayed. Marko Polo, who stopped by on his way to Mongolia, stated that the city had rich silver mines. In fact, the Ilkhanians provided a substantial tax income. The city, which was called Darül Celal during this period and gained economic vitality, was also a cultural center. Here, the madrasas of Mahmudiye and Yakutiye were established, Mevlevi had developed and also the organization of Ahi had spread.

After the death of the last Ilhanid ruler Abu Said Bahadir Khan (1334), Bayburt passed into the hands of Eretnaogullari. The city, which was attacked from time to time by the Erzincan Bey, entered the administration of Mutahharten for a while. However, soon after Kadi Burhaneddin, Kutlu Bey, one of the Akkoyunlu beys, was taken with the help of his son Ahmet Bey and Ahmet Bey was given as ikta. After a while, the city passed into the hands of the Karakoyunlu, again passed into the hands of Akkoyunlu and stayed there for a long time.

Bayburt region in 1501, Turkmen, was taken by the Safavids. During this period, Yavuz, the governor of Trabzon, raided this region (1507). After Yavuz ascended the throne, he sent some of his forces to Bayburt during his Iran campaign. In October 1514, Bayburt was taken away from Shah Ismail. After this, Bayburt was given to Erzincan Bey and Mehmet Bey Pasha with the name of Erzincan and declared the center of Sancak.

Bayburt castle, which became more important during Kanuni's Iran campaign, underwent a thorough repair in 1541. In 1553, Turkmen witnessed the raids of Shah Ismail's son Shah Tahmasb, but there was no significant event until the 19th century. During the Ottoman-Russian war of 1828-1829 he was occupied by Russian troops. Bayburt, which was occupied by the Russians in 1878 and 1916, was severely destroyed during these invasions.
